Recipe: Twice Baked Elephant Potatoes

This recipe comes courtesy of the Isle of Wight Garlic Farm, and requires one whole IOW elephant garlic (conveniently delivered fresh to us today. You can’t miss them in the shop: they’re BIG).

Ingredients: Two baking potatoes / One Elephant Garlic/ 2 oz butter / parmesan cheese / pepper / 1 tbsp finely chopped onion / 1 tbsp yogurt / paprika

Method: Bake two potatoes and also one whole Elephant Garlic wrapped in foil. Once cooked, slit open the potatoes and remove potato from skins.

In a bowl, mix/mash the potato with the garlic, 2 oz butter, some parmesan cheese, a dash of pepper, 1 tbsp finely chopped onion, and 1 tbsp of yogurt.

Mix well, and then return mixture to the potato skins. Sprinkle with paprika and brown in the oven under grill.
