Recipe: Smoked Garlic Mashed Potato

Why not invigorate your mashed potato with some smoked garlic? This recipe comes courtesy of The Garlic Farm on the Isle of Wight, who supply us with a selection of fresh garlic bulbs.

Serves: 4-5

Ingredients: 2lb (900g) floury variety potatoes, drained and mashed with 2oz butter / 4 tbsp cream / 4 tbsp chopped parsley / 2 cloves of Garlic Farm smoked garlic / milk if required.

Recipe: Light fry the chopped smoked garlic until just beginning to brown. Add to the mashed potato. Mix well, beat in the cream, a little at a time. Mix in the parsley and serve.
